Cauliflower & Basil Pizza

Pizza while on a diet … wait doesn’t that have way too many carbs?  Not the way I make it.  This recipe for a cauliflower and basil pizza is absolutely carb free and works perfect for any low carbohydrate meal or with The Miracle Metabolism Diet.  The best part is that you can have an entire carb free meal and save your 5 grams of carb for desert without having to wait 5 hours after dinner, as The Miracle Metabolism Diet requires.  Trust me, you won’t notice that this pizza has no carb enriched crust.

This cauliflower and basil recipe is fairly simple to make. It doesn’t even require the added step of precooking or steaming the cauliflower like some recipes require.  Here is how:

Cauliflower Basil Pizza

Makes 4 individual small pizzas (serving for 2)


1 egg

1/2 cup shredded mozzarella cheese

1/2 cup grated parmesan cheese

1 cup riced cauliflower (grate the raw cauliflower on a cheese grater or in a food processor)

1 garlic clove chopped

1/4 cup fresh julienned basil

½ cup marinara sauce

1/2 cup ricotta

Salt and Pepper to taste



Preheat oven to 450 degrees. Line a cookie sheet with parchment paper.

In a medium bowl, combine riced cauliflower, garlic, egg, parmesan, mozzarella, and all but one table spoon of the basil. Divide into 4 amounts and press evenly on the parchment paper.  Bake the crusts at 450 degrees for 12-15 minutes.  I baked for a full 15 minutes for a nice crispy crust.







In the meantime mix the ricotta and rest of the basil together in a small bowl.  Add salt and pepper to your taste.

Once the pizza crust is done, add marinara sauce to each pizza. Then add toppings if desired.  I added mushrooms to two of my pizzas.  Add two dollops of the ricotta basil mixture on top of each pizza.  Return the pizzas to the oven for 10 minutes or until the cheese is melted.




Voila!  Your pizza is ready to be devoured.
