Imagine sweet watermelon, tangy lime juice, spicy serrano, and creamy salty feta all in your mouth at the same time. Those are the flavors that these tiny bite size pieces of appetizers are packed with.
It may sound odd, but these complex flavors really shine through when combined together in this way and the result is deliciously refreshing. Serve it as a salad or a starter at any gathering to make an impactful impression. When I served them to my guests, they were bewildered by how I may have come up with this idea to combine these ingredients! One watermelon can really go a long way when you have a crowd to feed, so these Watermelon & Serrano Chili Bites are inexpensive, easy to prepare, and perfect for a crowd.
1 small ripe seedless watermelon, peeled and cubed
8 oz. feta cheese, crumbled
1 serrano chili, sliced thinly
1 tbsp. kosher salt, to taste
2 limes, juiced
2 tbsp. olive oil
- In a large bowl, combine the lime juice and olive oil. Stir well to combine. Add the watermelon, and toss to coat evenly.
- Arrange watermelon cubes on a serving plate, and top each piece with a little bit of feta, and a slice of serrano chili.
- Sprinkle with salt and serve immediately.
This should be served within a few hours, and if prepared too far in advance, the watermelon will release much of its juice.
