Garlic Cauliflower Mashed Potatoes

Are you looking for something to eat with your steak besides that side of greens?    We can all enjoy a nice juicy piece of steak on our low carb high protein diet, but that meal just doesn’t feel complete without that side of potatoes.  Let’s face it, that low carb piece of dinner roll is just not going to cut it and what goes better with a top sirloin than a side of mashed potatoes?  I’ve got a way for you to never miss your potatoes.  This is also a great way for you to get your kids to eat some vegies.  If you are anything like me, one who passes on the vegetables, this is a great way to include some vegies in my adult dinner as well.

I have a cauliflower mash recipe with all the fixings of mashed potatoes and you will never know that their is no potato in it.  If you are planning a Valentine’s Day steak dinner, this will make a wonderful addition to help you stick to your diet.

Garlic Cauliflower Mashed Potatoes

Ingredients

Makes 2 Servings

1/2 head cauliflower, cut into florets

1 tablespoon butter

1 clove garlic, smashed

1/4 cup grated Parmesan cheese

1 tablespoon heavy cream

1/2 teaspoon kosher salt

1/8 teaspoon freshly ground black pepper

Method

  1. Boil cauliflower florets until soft and tender, about 10 minutes. Drain the cauliflower well.
  2. Meanwhile, heat butter in a small skillet over medium heat; cook and stir garlic until softened, about 2 minutes. Remove from heat.
  3. Transfer the cauliflower to a food processor; cover and blend on high until it is creamy. Blend in garlic and butter, Parmesan cheese, heavy cream, salt, and black pepper.  If you life some texture to your mash, then just use a masher and blend it all together by hand.  This is my preferred method.

Tip: You can also substitute half of the cauliflowers for potatoes to create a mixture, if you really need the potatoes.
