Day 21 – Tomato Basil Soup

I suppose you have noticed that I’m opting for soups lately.  It’s finally starting to cool down and there is something about Autumn that beckons us to cook soup.  This Tomato Basil Soup from InterCourses is light, yet has just the right amount of hearty warmth for transition to crisp fall weather.

Process

It’s quite simple to make and just a matter  of tossing all the ingredients together.  Tomatoes, the love apple, as the base and main ingredient in a course is ideal for a cool evening of amorous delights.

You first need to saute one small chopped onion and 3 chopped garlic cloves in olive oil in a skillet until tender. Add three chopped tomatoes. Cook over medium heat for 10 minutes then add half cup of tomato sauce, ¾ cup chicken broth, ¼ cup cream, and one tablespoon of coarsely chopped basil. Simmer for 30 minutes. Process the entire soup in a blender until smooth. Then return to the pan. Add one slice well-toasted country bread, another tablespoon of basil, and two tablespoons of Parmesan cheese. Season with salt and pepper to taste and garnish with additional cheese and oil.

Results

I don’t have to mention again that tomatoes have long been revered as an aphrodisiac as well as the Basil plant.  When the two combine together, they can only create a romantic brew.  We don’t often consider tomato soup romantic, but rather wholesome.  However, Tamato Basil Soup engulfed in its wholesomeness is every bit as romantic with it’s crimson hue and beautiful aroma.

  1. I am starting to make soups now, with the winter coming. I love tomato soup, thanks for the reminder of using basil which is a nice change from just tomato.
