Corned Beef Hash

Happy St. Patrick’s Day!  As we all turn Irish today, we fill up on corned beef and good ale.  Some of you have been in an Irish Pub all day.  Hope you get to enjoy some good Irish grub, like Shepherd Pie. After all, it is the Feast of St. Patrick.   For those of you partying hard tonight, hearty protein packed Corned Beef Hash will fix that hangover.

If you are hosting, you are bound to have some corned beef leftover, and the best way to use it is in a corned beef hash. It’s really easy straight forward to make when your tired the next morning as well!

Corned Beef

Corned Beef Hash

Ingredients

3 tablespoons vegetable oil

2 cups baby red potatoes, cut into small cubes

½ yellow onion, diced

Salt and pepper to taste

2 cups cooked corned beef, diced

1 tablespoon butter

Fried Eggs (optional)

Method

  1. Heat the oil in a large skillet over medium heat.
  2. Add to potatoes and sauté for about 10 minutes, flipping them as they turn brown.
  3. Add the onion, salt and pepper to taste, and continue sautéing until the potatoes and onions are both golden brown and potatoes are cooked through.
  4. Add the corned beef and blend thoroughly.
  5. Finish by stirring the butter into the mixture.
  6. Serve with fried eggs (optional).
